Sweet Potato Pizza - Vegan, Gluten/Wheat free

I have always been a pizza fan growing up. Since i started my healthy journey that is one of the things that I gave up for a long time! This pizza hits the spot for me, i just miss the cheesy part which I'm soon planning to make using cashews :) 

This pizza is super healthy with nutritious ingredients. It is also very simple to make and the best part is you can top it however you want to. 

Recipe:

Ingredients
1 medium sweet potatoes (steamed and cubed)
1/2 TBSP Chia Seeds (mixed in 1&1/2TBSP of water and kept aside for at least 10 minutes so its like a glue consistency. You can use an egg instead if you don't have any allergies from eggs - this is an egg replacer).
1/2 + 1/8 cup of oat flour (grounded oats)
1/8 cup almond flour (grounded almonds)
1/2 TBSP olive oil
1/2 TBSP apple cider vinegar
1/2 tsp of mixed herb seasonings of choice
1/2 tsp of garlic powder
1/2 tsp red chili flakes
1/2 tsp sea salt

Method
- Pre heat oven to 200c
- Mash the potatoes in a big bowl
- Add the rest of the ingredients in the bowl and stir to combine thoroughly
- Line a round vented pan with parchment paper 
- Put the dough on it and press with your fingers to form a circle and then spread it evenly so its smooth with a spatula (you might need to grease the spatula with a little bit of olive oil if its sticky)
- Put the pan in the oven (mine was too big for the oven so i placed the parchment paper over the oven rack)
- Bake for 35 minutes or until edges are golden
- Remove from edges and let it cool
- Add your desired toppings (I added my sun dried tomato sauce (you can find the recipe on the blog) and some thinly sautéed vegetables)
- Put back in the oven for another 5-10 minutes on broil
- Slice and serve immediately.
