Mango & Avocado Salad with Apple Cider Vinaigrette Dressing

This salad is definitely my favourite summer salad, maybe because it contains both of my favourites: Avocado & Mango :)

It is very simple to make made of chopped lettuce, cucumbers, broccoli, onions, avocado and mango. You can add your favourite vegetables if you like. What makes this salad very special is this nutritious and mouth watering dressing! After adding the dressing to my salad, I usually sprinkle sesame seeds. You can skip that part although i feel like it gives it such a nice twist. You can even sprinkle your favourite seeds/nuts.


Apple Cider Vinaigrette Dressing Recipe

Ingredients
3/4 cup Apple Cider Vinegar (my favourite brand is BRAGG they are known for their excellent quality in making raw unfiltered apple cider vinegar. It can be found at LULU Ghubra)
1 cup of Extra Virgin Olive Oil
1/2 cup Water
1/4 of an Onion
1 clove of Garlic
1/4 cup Raw Honey
1 tsp Sea Salt
1/4 cup juice of a Lime
1/2 sweet yellow or red bell pepper
1 tsp dijon mustard

Method
- Blend the garlic, onion, pepper, lemon juice and water so that it is liquid.
- Add honey, mustard & salt.
- Blend all then drizzle oil to get the structure that you desire.
- Mix and add to your salad or store in the fridge for up to 6 weeks.

In this picture i ran out of lettuce, cucumbers and sesame seeds but it was still SO good!
